Psychedelic cabbage

I did threaten to turn to food blogging, didn't I? Well... I couldn't resist the charms of today's red cabbage, that most fractal-looking of vegetables (aside from romanesco broccoli). This just may be the prettiest, and the most psychedelic, of all the vegetables I've encountered:

And this is what I made from it:

Red cabbage, apple slices, walnuts, and a very basic dressing (oil, lemon juice, tiny bit of balsamico, tiny bit of maple syrup, salt, pepper). Nice and simple.
If there are any china nerds in the audience: you may have noticed that that is a very expensive plate. I am not, in fact, rich. I just really like pretty plates, and a few years ago was given two of these as a gift. I love them a lot. They're not representative of my general lifestyle at all, though.
